Protein-packed Banana Crepes

I am not a super gifted cook, and I’m a horrible baker. But I gotta admit I can rock out an pretty darn good breakfast. It’s quickly becoming my favorite meal of the day. I’m really proud of these crepes!

These are quick, easy and super duper healthy. Yay!

 

Ingredients:

1/2 cup egg whites (use a little more if mixture is too thick)

1/2 scoop vanilla protein powder (I use Plant Fusion)

small banana, mashed

1-2 tbsp peanut butter powder (optional)

pinch of baking powder

Filling: Plain greek yogurt sweetend w/ Stevia (3-4 oz for 2)

Topping: 1 tsp coconut oil, melted and a 1-2 tbsp of chocolate vegan Shakeology

Directions:

Mix 5 main ingredients vigorously with a wisk or hand blender. Pour 1/2 into small skillet pre-heated to medium heat and sprayed with coconut oil. (Use a lid for more even cooking.) Cook on one side a few minutes until set and then flip to finish.

Fill, fold and top as desired!
