I post recipes all the time on my Facebook page, and I’m finally making a home for some on my blog! Of course being the recovering sugar addict that I am it’s totally appropriate for me to start with a sweet treat. I am all over ways to satisfy the cookie monster in me without wrecking my nutrition for the day. These lil’ buggers really do the trick!
- 3 tbsp Almond Flour
- 3 tbsp Coconut Flour
- 2 tbsp Powdered Peanut Butter
- 2 scoops Chocolate Vegan Shakeology (or other chocolate protein powder but then you can’t call them ‘superfood’ bites.:))
- 2 tbsp(s) Cocoa – Dry powder, unsweetened
- 0.50 cup Canned Pumpkin Puree
- 2 tsp raw Honey
- 2 Tbsp Almond Butter
- 0.30 cup, Almond Milk (Unsweetened Vanilla)
- 2 tbsp(s), Semi-Sweet or Dark Chocolate Chips
- 2 tbsp Walnut pieces
Stir dry ingredients together; add pumpkin, honey and almond butter and mix well. (Microwave the almond butter first if needed.) Mixture will be dry and crumbly. Add almond milk (may need more depending on consistency.) Add chocolate chips and walnuts. Roll into 18 balls. Put in fridge to firm up.
Now just don’t eat them all at once!! That would be too easy to do.
True confession: my family hasn’t tried them yet… I kinda hide them in the fridge because I think if they discovered them they would be GONE!
Still debating how to count these for 21 Day Fix nutrition… 2 for a yellow probably makes the most sense.
OPTIONS: You can sub mashed ripe banana for pumpkin (but you can’t taste the pumpkin and you’ll keep them lower in sugar,) skip the pb powder and double the almond butter (I was trying to reduce calories and a bit) and use any kind of nuts or skip them all together. You can also leave out the honey…I just thought they needed a touch more natural sweetness.
